Evan and I inhaled this last night and can’t wait to make it again and again! TJ’s launched a brand new peanut satay sauce that pairs perfectly with chicken and veggies. Ingredients

  • 1.25-1.5 lbs chicken thighs
  • 1 Asian Style Stir Fry Veggie container
  • 1 jar Thai Peanut Satay Sauce

Directions

  1. Cook chicken in a few tablespoons of avocado or olive oil in a skillet. When cooked through to 165 F, set aside on a plate and cover (with a lid or another plate) to keep warm. Mine took about 8 minutes to cook.
  2. Add another drizzle of oil to the same pan and sauté stir fry veggies for about 10-12 minutes until softened. Stir occasionally.
  3. While veggies are cooking, shred chicken into bite size pieces.
  4. Add shredded chicken and peanut satay sauce to the veggies and simmer for a few minutes to let the flavors meld together.
  5. Enjoy!
