This is the perfect fix for a busy weeknight when you just don’t feel like cooking dinner. Here to get you through those midweek blues is an easy and nutritious dinner - my Loaded Veggie Nachos! You can easily adapt this with what you have on hand. I’m dairy free right now but adding cheese would definitely take this to the next level! These are perfect vegetarian nachos if you just leave out the shredded chicken.

Ingredients
- 1/2 bag tortilla chips
- Shredded chicken (leave out for vegetarian option)
- 1 can red salsa
- 1 can black beans
- 1 can corn
- 2 small/ 1 large red bell pepper, diced
- 1 small onion, diced
- 1 small can green chilis
- 1 lime
Directions
- Preheat oven to 400 degrees.
- In a skillet over medium heat, sauté peppers and onions until softened, about 7-9 minutes.
- On a large sheet pan covered in foil, add chips, then layer with chicken, salsa, black beans, corn, pepper and onion.
- Bake for 10 minutes.
- Squeeze lime juice over the nachos and enjoy! Serve with guacamole, it’s the best!
