Trader Joe’s meal hack time! I’m so into soup extenders right now. You know the delicious ready made soups from TJ’s? So good. But also often not enough for two people or have too much sodium for one serving or don’t have protein, the list goes on. I’ve hacked that by making extensions to my favorite soups so they can feed more people in a healthier way - and still taste so good! This one takes the Harvest Chili ready-made soup, packs in some extra veggies and protein and delivers 3-4 servings.

Ingredients
- 1 can harvest chili
- 2 cups low sodium vegetable broth
- 1/4 tsp each chili powder, cumin, paprika, garlic powder, onion powder
- 1/2 bag frozen cauliflower rice
- 2 bell peppers any color
- 15 frozen sweet potato purée pieces
- 1 package garlic herb chicken sausage
Directions
- Chop bell peppers into small chunks and heat in a soup pot on medium heat with a drizzle of olive oil. Cook until softened
- Chop chicken sausage into slices (coin/medallion shaped) and add to the pot.
- Add seasonings and stir until fragrant.
- Add broth, soup container, frozen cauliflower rice and frozen sweet potato puree.
- Cook until hot, stirring occasionally.
- Enjoy!
