Do you ever want to enjoy a delicious slice of coffee cake without doing all the work to make it from scratch? Cool, glad I’m not the only one. Here to save the day is this Trader Joe’s Coffee Cake glow up! We’re gonna add a little something to the Cinnamon Crumb Coffee Cake mix from Trader Joe’s that really takes it to the next level. There are two directions you can go with this - brown butter or blueberry lemon. Follow your heart, both options are insanely good. I also tested some dairy free options that worked great with this - and best of all, if you’re out of eggs you can substitute with flaxseed meal and a bit of water and it turns out perfectly! Coffee Cake Glow Up - Two Ways
Ingredients
Brown Butter Coffee Cake
- Cinnamon Crumb Coffee Cake mix
- Egg, milk as listed on the mix box*
- 7 tbsp butter (the package says 6 but we’ll need an extra tbsp)*
Blueberry Lemon Coffee Cake
- Cinnamon Crumb Coffee Cake mix
- Butter, egg, milk as listed on the mix box*
- 1 cup blueberries
- Zest from 1 large or 2 small lemons
Directions
Brown Butter Coffee Cake
- Cut your 7 tbsp of butter into small chunks and heat in a saucepan over medium heat, stirring occasionally until the mixture turns brown and smell nutty. Remove from heat immediately and set aside to cool.
- Follow the instructions on the box of mix. Add browned butter with all other ingredients, then bake as directed.

Blueberry Lemon Coffee Cake
- Follow the instructions on the box of mix. Add blueberries and lemon zest with all other ingredients, then bake as directed.

Notes
- For dairy free, we used unsweetened almond milk.
- We tested this with a flax egg as replacement for a regular egg. To prepare a flax egg, mix 1 tbsp flaxseed meal with 2 1/2 tbsp water in a small bowl and set aside for 5 minutes until the mixture thickens. Then use it in place of the egg as the recipe instructs. The overall texture of the coffee cake was less dense and a bit more cakey with a flax egg which we actually preferred.
- When you brown butter, some of the moisture escapes leaving you with less butter overall than when you started. That’s why you should brown 7 tablespoons - you’ll end up with just the right amount to put in your mix.
- With both the brown butter and blueberry lemon versions, our coffee cake cooked in 45 minutes.
