Lately I’ve been obsessed with the ready-made Chicken Kettle Soup from Trader Joe’s. The problem is there’s not quite enough chicken in there to fill me up and definitely not enough for more than one serving. With a few extra ingredients from TJ’s, I figured out how to make it stretch and get some leftovers. Here’s my hack to get 5 servings of deliciousness without too much effort! And the best part? This comes together in 10 minutes - and I can keep it all going in one pot on the stove while keeping the baby entertained. Big wins over here.

Ingredients

  • 1 Chicken Kettle Soup
  • 2 cans of white chicken
  • 1 Mirepoix vegetable mix
  • 2 cups Low sodium chicken broth
  • 1 tsp 21 seasoning salute (more to taste!)

Directions

  1. Saute mirepoix with a drizzle of olive oil in a pot.
  2. Once veggies are softened, add seasoning and chicken broth.
  3. Stir, heat for a few more minutes, then add chicken kettle soup container and both cans of chicken. Break up chicken a bit with spatula.
  4. Heat and stir for 5-7 more minutes or until hot.
  5. Serve and enjoy!
